福州光饼
Fuzhou Guangbing is a traditional Fujian street snack. Crispy outside, soft inside, with fragrant sesame seeds. Chewy and full of wheat flavor.

6 items- All-purpose flour 300 g
- Dry yeast 3 g
- Caster sugar 5 g
- Salt 3 g
- Warm water 180 g
- White sesame seeds 20 g

Steps (8 steps)
In a large bowl, combine 300g flour, 3g yeast, 5g sugar, and 3g salt. Add 180g warm water and stir into flaky dough.
Knead the dough on a floured surface for about 5 minutes until smooth, elastic, and passes the windowpane test.
Cover with plastic wrap and let rise in a warm place for 30 minutes until doubled in size and spongy inside.
Punch down the dough, knead briefly, then roll into a log and divide into 8 equal pieces (about 60g each).
Shape each piece into a ball, flatten, and roll out into an 8 cm disc about 0.5 cm thick, even thickness.
Brush the top of each disc with water, then press the wet side onto a plate of sesame seeds to coat firmly.
Preheat oven to 200°C (400°F). Place discs sesame-side up on a parchment-lined baking sheet and bake 15 minutes until golden and puffed.
Transfer to a wire rack to cool for 5 minutes before serving. Best enjoyed warm, crispy outside and soft inside.
Tips
Fermentation time varies with temperature: 25 min in warm weather, up to 40 min in cold. Roll discs evenly. Press sesame firmly. Adjust oven time as needed.
