Macau Peanut Biscuit
A classic Macanese snack, these biscuits are crispy, sweet, and bursting with peanut flavor. They melt in your mouth and leave you wanting more.

- Powdered sugar 80g
- Raw peanuts 100g
- Corn oil 80ml
- Baking powder 3g
- Salt 1g
- Egg yolk 1

Heat a pan over low heat, add raw peanuts and stir-fry for 8-10 minutes until slightly golden and fragrant. Cool, remove skins, and crush with a rolling pin into coarse crumbs.
In a large bowl, sift together cake flour, powdered sugar, baking powder, and salt. Mix well with a whisk.
Add corn oil and crushed peanuts. Use your hands to mix until a crumbly dough forms. If too dry, add a little water; just until no dry flour remains.
Divide the dough into 20 portions (about 15g each), roll into balls, and gently flatten into discs about 0.5cm thick. Arrange on a baking sheet.
Brush tops with egg yolk. Bake in a preheated oven at 180°C (350°F) for 15-18 minutes, middle rack, until golden brown.
Remove from oven and let cool completely on a wire rack. The biscuits will become crispy as they cool. Enjoy!
Tips
Do not crush the peanuts too finely; coarse bits create a crunchier texture. Adjust baking time based on your oven; cover with foil if browning too quickly. Store in an airtight container once completely cooled.
