Macau Agar Agar Pudding
A refreshing coconut flavored jelly-like dessert from Macau, perfect for cooling down in summer.
Ingredients
5 items- agar agar (powder or strands) 10 g
- water 500 ml
- granulated sugar 100 g
- coconut milk 200 ml
- whole milk 100 ml

Cut agar agar into 3 cm pieces. Soak in cold water for 15 minutes until softened and whitened. Drain.
In a small pot, bring 500 ml water to a boil over high heat. Reduce to medium heat, add soaked agar agar. Stir for about 5 minutes until fully dissolved, mixture becomes slightly thick and clear.
Add sugar and stir for 2 minutes until dissolved. The liquid should be clear. Remove from heat.
Pour in coconut milk and milk. Whisk until well combined. The mixture turns milky white and aromatic.
Strain mixture through a fine sieve into a mold. Let cool to room temperature then cover and refrigerate for at least 3 hours until set.
Unmold by running a knife around edges. Invert onto plate. Cut into pieces. Serve with shredded coconut or fruit.
Tips
Agar agar must be fully soaked to dissolve completely. The longer it chills, the smoother the texture. Prepare a day ahead for best results.
