Huadiao Chicken
Huadiao Chicken is a classic Chinese dish where chicken is braised in Huadiao wine. The meat becomes tender and the sauce rich, infused with an aromatic wine flavor. Truly unforgettable.
Ingredients
10 items- Chicken thighs 500 g
- Huadiao wine 150 ml
- Ginger 20 g
- Spring onions 2
- Light soy sauce 3 tbsp
- Dark soy sauce 1 tbsp
- Rock sugar 30 g
- White pepper to taste
- Cooking oil 2 tbsp
- Water 200 ml

Cut chicken thighs into 4 cm cubes. Mix with 1 tbsp Huadiao wine, 1 tbsp light soy sauce, and white pepper. Marinate for 15 minutes.
Slice ginger, cut spring onions. In a bowl, combine Huadiao wine, light soy sauce, dark soy sauce, and rock sugar.
Heat oil in a wok over medium-high heat. Add ginger and spring onion, stir-fry for 1 minute until fragrant and edges slightly charred.
Increase heat to high, add chicken in a single layer. Sear for 2 minutes until golden brown on the bottom, then flip and sear other side.
Pour in the sauce mixture, stir well, add water to half-submerge the chicken. Bring to a boil over high heat.
Reduce heat to low, cover and simmer for 25 minutes until chicken is tender and can be easily pierced with a chopstick, and sauce has reduced slightly.
Remove lid, turn heat to high to reduce sauce, stirring constantly, until the sauce thickens and coats the chicken nicely.
Turn off heat, transfer to a plate, garnish with chopped scallions or cilantro.
Tips
Use a 5-year aged Huadiao wine for the best aroma. White pepper helps remove gamey taste. Stir continuously during reduction to prevent sticking. Chicken thighs are recommended for juiciness.
