Chicken Giblets Noodles
A popular Chinese noodle dish featuring chicken gizzards, liver and heart stir-fried in a savory sauce. The chewy noodles and tender giblets make a hearty, flavorful meal.

- chicken gizzard 100g
- chicken liver 50g
- chicken heart 50g
- ginger 1 small piece
- garlic 3 cloves
- green pepper 1/2
- red pepper 1/2
- cilantro 1 small bunch
- light soy sauce 1 tbsp
- dark soy sauce 1/2 tbsp
- sugar 1/2 tsp
- cooking wine 1 tbsp
- salt to taste
- cornstarch 1 tbsp
- cooking oil 2 tbsp

Slice gizzard, chop liver, halve heart; put in bowl with 1 tbsp wine and pinch of salt; mix and marinate for 10 minutes to remove odor.
Julienne ginger, slice garlic, cut peppers into rings, cut cilantro into sections. Set aside.
Bring water to a boil, add 200g fresh noodles; cook on high for 2 minutes until al dente. Drain, rinse under cold water, drain well.
Heat wok over medium heat, add 2 tbsp oil; sauté ginger and garlic for 30 seconds. Turn to high heat, add giblets; stir-fry quickly until gizzard curls and changes color.
Add 1 tbsp light soy sauce, 1/2 tbsp dark soy sauce, 1/2 tsp sugar; stir-fry to coat evenly for about 1 minute.
Add pepper rings, stir-fry 30 seconds. Pour in cornstarch slurry, stir until sauce thickens and coats the back of a spoon; turn off heat.
Place noodles in a bowl, top with giblets and sauce, garnish with cilantro. Mix well before eating.
Tips
Clean giblets thoroughly and remove any bitter parts. High-heat stir-frying keeps them tender. Thickened sauce helps coat noodles for better flavor.
