- Onion 1
- Cumin powder 2 tbsp
- Chili powder 1 tbsp
- Salt 1 tsp
- Light soy sauce 2 tbsp
- Cooking wine 1 tbsp
- Vegetable oil 1 tbsp
- Bamboo skewers 8-10

Place lamb cubes in a large bowl, add chopped onion, cumin powder, chili powder, salt, soy sauce, and cooking wine. Mix thoroughly with your hands and marinate for 30 minutes.
Remove skewers from water. Thread 4-5 pieces of lamb onto each skewer, alternating fat and lean pieces, leaving small gaps.
Preheat oven to 200°C (or use a charcoal grill). Line a baking tray with foil and brush with a thin layer of oil.
Arrange skewers on the tray, place in the middle rack of the oven. Bake for 10 minutes, flip, then bake for 5 minutes until golden brown and edges slightly charred.
Sprinkle with extra cumin powder and chili powder while hot, serve immediately.
Tips
Longer marinating enhances flavor; at least 30 minutes. Soak skewers thoroughly to avoid burning. If oven is not available, pan-fry is an option, but texture may vary. Monitor closely to prevent burning.
