Baked Enoki Mushrooms
Baked enoki mushrooms with a slightly charred exterior and tender interior, mixed with garlic and spice; a simple and quick vegetarian appetizer.
Ingredients
9 items- Enoki mushrooms 200 g
- Soy sauce 2 tbsp
- Oyster sauce 1 tbsp
- Garlic 3 cloves
- Cooking oil 1 tbsp
- Chili powder 1/2 tsp
- Cumin powder 1/2 tsp
- Scallions to taste
- White sesame seeds to taste

Cut off about 1 cm of the enoki mushroom roots, separate into small bunches, rinse thoroughly and drain well.
In a small bowl, mix soy sauce, oyster sauce, minced garlic, oil, chili powder and cumin powder until well combined.
Pour the sauce over the mushrooms and gently toss with chopsticks to coat evenly; let marinate for 5 minutes.
Preheat oven to 200°C (400°F). Line a baking tray with aluminum foil or parchment paper.
Spread the marinated mushrooms in a single layer on the tray (do not overlap). Bake in the middle rack for 12-15 minutes until golden and edges are slightly charred.
Remove from oven, transfer to a serving plate, sprinkle with chopped scallions and sesame seeds. Serve immediately.
Tips
Make sure the mushrooms are thoroughly drained or they will release water during baking. For a crispier texture, extend baking by 2-3 minutes. Longer marination enhances flavor.
