Youcha (Oil Tea)
A traditional Guizhou snack blending fried rice, peanuts, and ginger tea—warm, aromatic, and comforting.
Ingredients
7 items- rice 100g
- raw peanuts 50g
- old ginger 1 piece (30g)
- green tea leaves 20g
- cooking oil 30ml
- salt to taste
- scallions to taste

Drain the rice. Heat a wok over medium heat, add rice, stir-fry over medium-low heat for about 15 minutes until golden and crispy. Set aside.
In the same wok, add peanuts and stir-fry over medium-low heat for 5 minutes until skins are lightly charred and fragrant. Mix with the rice.
Add oil, ginger and tea leaves. Stir-fry over low heat for 3 minutes until fragrant and tea leaves are crisp but not burnt.
Pour in 800ml boiling water, bring to a boil over high heat, cover and simmer over medium heat for 8 minutes to infuse flavors.
Strain the broth through a sieve to remove tea leaves and ginger; return liquid to the wok. Season with salt; keep warm over low heat.
Place some fried rice and peanuts in a bowl, ladle about 200ml of hot ginger tea broth on top, and garnish with scallions.
Tips
Stir-fry rice over moderate heat, stirring constantly to avoid burning. Over-boiling tea makes it bitter; filtering gives a clear soup. Add tofu puffs or glutinous rice cakes for extra texture.
