Yipin Tofu (一品豆腐)
Yipin Tofu is a classic Chinese steamed dish. The tofu is silky smooth, the filling is savory and juicy, with exquisite presentation and rich flavor layers, ideal for family banquets.

14 items- Silken tofu 1 box (about 400g)
- Shrimp 50g
- Chicken breast 50g
- Dried shiitake mushrooms 3
- Egg white 1
- Ginger 10g
- Scallions 2 stalks
- Cooking wine 1 tbsp
- White pepper 1/4 tsp
- Soy sauce 1 tbsp
- Cornstarch 1 tbsp
- Salt 1 tsp
- Cooking oil 1 tbsp
- Goji berries a few

Steps (8 steps)
Cut the silken tofu into 2 cm cubes. Bring a pot of water to a boil, add 1 tsp salt, blanch tofu for 1 minute, drain and arrange on a plate.
Mince shrimp, chicken breast, and soaked mushrooms. Add ginger, scallion, cooking wine, white pepper, salt, egg white; stir in one direction until the mixture firms up, about 2 minutes.
Spoon the filling evenly over each tofu cube, pressing gently to adhere.
Place the plate in a steamer over boiling water, cover, and steam over medium-high heat for 8 minutes until the filling is cooked through.
Remove the plate and carefully pour the accumulated liquid into a small bowl.
Add soy sauce and cornstarch to the liquid, stir to make a sauce. Heat a little oil in a pan over low heat, pour in the sauce and stir until thickened and glossy.
Drizzle the sauce over the tofu, garnish with scallions and goji berries.
Serve immediately while hot.
Tips
Blanching the tofu removes its beany flavor and helps maintain its shape during steaming. Mixing the filling in one direction creates a springy texture.
