Stir-fried Pork Slices with Onion

Ingredients

- Onion 1
- Garlic 2 cloves
- Ginger 1 small piece
- Shaoxing wine 1 tbsp
- Light soy sauce 1 tbsp
- Dark soy sauce 1/2 tbsp
- White pepper 1/2 tsp
- Cornstarch 1 tsp
- Sugar a pinch
- Cooking oil 2 tbsp
- Salt to taste
- Scallion or cilantro a little

Thinly slice the pork tenderloin. Mix with Shaoxing wine, light soy sauce, white pepper, and cornstarch. Marinate for 10 minutes.
Peel and cut the onion into wedges. Mince the garlic and slice the ginger. Set aside.
Heat the wok over medium heat, add 2 tbsp oil and turn to high. When hot, add the pork slices and stir-fry quickly until color changes, about 1 minute. Remove and set aside.
Keep a little oil in the wok, sauté garlic and ginger over medium heat. Add onion and stir-fry over high heat until edges become translucent and soft, about 2 minutes.
Return the pork to the wok. Add 1 tbsp light soy sauce, 1/2 tbsp dark soy sauce, and a pinch of sugar. Stir-fry quickly for 30 seconds to combine.
Adjust salt if needed. Garnish with chopped scallion or cilantro. Serve.
Tips
Coating pork with cornstarch keeps it tender. Fry pork first and set aside to avoid overcooking. Cook onion on high heat to retain crunch.
