Spicy Chicken with Green Peppers

Ingredients

- Green hot peppers 200g
- Ginger 10g
- Garlic 15g
- Dried red chilies 10g
- Sichuan peppercorns 1 tsp
- Light soy sauce 2 tbsp
- Dark soy sauce 1 tbsp
- Shaoxing wine 1 tbsp
- Salt 1/2 tsp
- Sugar 1/2 tsp
- Cornstarch 1 tbsp
- Vegetable oil as needed

Combine diced chicken with wine, light soy sauce, cornstarch, and salt; mix well and marinate for 15 minutes.
Slice green peppers, slice ginger, crush garlic, and cut dried chilies into sections. Set aside.
Heat oil in a wok over medium heat. Add Sichuan peppercorns, dried chilies, ginger, and garlic; stir-fry for about 1 minute until fragrant.
Turn the heat to high. Add chicken and stir-fry quickly for about 2 minutes until the chicken changes color and the surface is slightly golden.
Add green pepper slices and continue stir-frying over high heat for about 2 minutes until the peppers are just cooked but still crisp and bright green.
Add dark soy sauce and sugar; stir-fry over high heat for about 30 seconds until the sauce evenly coats the chicken.
Transfer to a serving plate and garnish with chopped green onions if desired. Serve immediately.
