Roasted Pork Ribs (Kaopaizi)

- Light soy sauce 3 tbsp
- Dark soy sauce 1 tbsp
- Oyster sauce 2 tbsp
- Shaoxing wine 2 tbsp
- Minced garlic 1 tbsp
- Minced ginger 1 tsp
- Five-spice powder 1 tsp
- Sugar 1 tbsp
- Honey 2 tbsp
- Salt to taste
- Toasted white sesame seeds to taste
- Chopped scallions to taste

Cut pork ribs into individual pieces. Soak in cold water for 30 minutes to remove blood, then drain well.
In a bowl, combine light soy sauce, dark soy sauce, oyster sauce, Shaoxing wine, garlic, ginger, five-spice powder, sugar, and a pinch of salt to make the marinade.
Place ribs in a large bowl, pour in marinade, and toss to coat evenly. Cover with plastic wrap and refrigerate for at least 2 hours, turning once.
Preheat oven to 200°C. Line a baking sheet with foil, arrange ribs on a wire rack, and brush with honey and vegetable oil.
Bake on middle rack at 200°C for 30 minutes, turning halfway and brushing with more marinade.
Remove ribs, brush both sides with honey and remaining marinade, and bake for another 10 minutes until golden and caramelized, meat pulls away from bone.
Sprinkle with sesame seeds and scallions. Serve hot.
Tips
Marinate overnight for deeper flavor. Adjust baking time based on rib size; the ribs are done when tender and meat separates from bone.
