孝感麻糖
A traditional snack from Xiaogan, Hubei, made with crispy sesame seeds and thick maltose syrup. Sweet but not greasy, crunchy and delicious.
Ingredients
7 items- Black sesame seeds 100g
- White sesame seeds 100g
- White sugar 100g
- Maltose syrup 200g
- Water 50ml
- Osmanthus syrup 1 tbsp
- Cooking oil as needed

Toast black and white sesame seeds separately in a dry pan over low heat for about 3 minutes until fragrant and lightly golden. Remove and set aside.
Combine sugar, maltose syrup, and water in a pot. Heat over medium until boiling, then reduce to low and simmer for 8-10 minutes until the syrup hardens when dropped into cold water.
Turn off heat. Quickly stir in toasted sesame seeds and osmanthus syrup with a wooden spatula until evenly coated.
Brush a baking tray with oil. Pour the hot mixture onto the tray and press flat with a scraper to about 0.5 cm thickness.
While still warm, cut the candy into small pieces or bars, about 2-3 cm wide.
Let cool completely until hard and crisp, about 20 minutes. Store in an airtight container to prevent moisture.
Tips
Keep a stable heat when boiling syrup to avoid crystallization. Toasting sesame seeds beforehand enhances flavor. If the candy hardens too much when cutting, briefly microwave on low to soften slightly.
