Peel mango and cut into 1 cm thick strips. Soak in lightly salted water for 10 minutes to prevent oxidation, then drain.

In a thick pot, add sugar and water. Heat over medium, stirring until sugar dissolves. Reduce to low, add lemon juice, and simmer for 5 minutes until syrup thickens slightly.

Add mango strips to the syrup. Cook on low heat, gently turning to coat evenly. Simmer for 15 minutes until mango becomes translucent and springy.

Turn off heat and let mango strips cool naturally in the syrup, soaking for at least 1 hour to absorb sweetness.

Remove mango strips and arrange on a rack to drain excess syrup. Dry in a fan‐oven preheated to 60°C for 3 hours until surface is dry and not sticky.

Cool completely, dust with a little powdered sugar to prevent sticking, and store in an airtight container.

Tips
