Osmanthus Water Chestnut Cake

- Water chestnuts 150 g
- Dried osmanthus flowers 5 g
- Rock sugar 100 g
- Water 600 ml
- Cooking oil a little

In a large bowl, whisk water chestnut powder with 300 ml water until smooth. Let the batter rest for 5 minutes.
In a small saucepan, combine rock sugar and remaining 300 ml water. Cook over medium heat until sugar dissolves, add osmanthus, simmer 2 minutes, then turn off heat.
Slowly pour the hot osmanthus syrup into the batter while stirring rapidly in one direction; the mixture will thicken into a translucent paste.
Fold the diced water chestnuts into the batter until evenly distributed.
Lightly grease a heatproof container with oil, pour in the batter, and smooth the surface with a spatula.
Place the container in a steamer over boiling water, cover, and steam over high heat for 20-25 minutes until the cake is fully translucent with no white center.
Remove the cake, let cool completely (refrigerate for 2 hours), then invert onto a plate, slice into thick pieces or cubes, and serve.
Tips
Ensure the batter is lump-free. Stir rapidly when adding syrup. Steaming time may vary depending on thickness; the cake is ready when a toothpick inserted comes out clean.
