Garlic Roasted Prawns
Juicy prawns roasted with a fragrant garlic topping, crispy on the outside and tender inside. A simple yet stunning dish.
Ingredients
11 items- Prawns 500g
- Garlic 1 whole head
- Light soy sauce 1 tablespoon
- Oyster sauce 1 tablespoon
- Salt 1/2 teaspoon
- Sugar 1 teaspoon
- White pepper 1/4 teaspoon
- Cooking wine 1 tablespoon
- Cooking oil 2 tablespoons
- Bird's eye chili 2
- Spring onion to taste

Trim the prawns by cutting off the whiskers and sharp rostrum. Make a deep cut along the back to the tail and remove the vein. Rinse and drain thoroughly.
Mince the garlic finely. Combine in a bowl with soy sauce, oyster sauce, salt, sugar, white pepper, cooking wine, and oil. Mix well to form the garlic sauce (add chili if using).
Add the prepared prawns to the sauce and mix well to coat evenly. Cover with plastic wrap and marinate for 15 minutes.
Preheat oven to 200°C (400°F). Arrange the prawns on a foil-lined baking tray, brush with a little oil. Roast in the middle rack for 10-12 minutes until pink and curled, with the garlic golden.
Remove from oven, sprinkle with spring onions or cilantro. Optionally, drizzle with hot oil to sizzle. Serve immediately.
Tips
Be careful not to cut through the tail to keep the shape nice. Do not over-marinate to prevent tough prawns. Adjust roasting time based on prawn size.
