Emperor Qianlong's Cabbage
Sweet, sour and crunchy with rich sesame dressing. A simple and classic Beijing cold dish that awakens the appetite.
Ingredients
10 items- Napa cabbage heart 200 g
- Sesame paste 2 tbsp
- Light soy sauce 1 tbsp
- Black vinegar 2 tbsp
- Sugar 1 tbsp
- Honey 1 tbsp
- Salt 1/4 tsp
- Sesame oil 1 tbsp
- White sesame seeds to taste
- Garlic 1 clove (optional)

Take 200 g napa cabbage heart, remove outer leaves, rinse and drain until no visible water drops. Tear into 5 cm pieces by hand and place in a large bowl.
In a small bowl, combine sesame paste, soy sauce, black vinegar, sugar, honey, salt, and garlic. Stir in one direction until smooth; if too thick, add a little cold water to achieve a slow-flowing consistency.
Pour the dressing over the cabbage. Mix thoroughly with chopsticks or hands until each piece is evenly coated, showing a thin layer of dressing.
Drizzle with sesame oil and sprinkle white sesame seeds. Gently toss to blend the flavors and transfer to a serving plate.
Refrigerate for 15–30 minutes to let the cabbage absorb the dressing and become more crunchy, or serve immediately.
Tips
Make sure the cabbage is thoroughly dried; otherwise the dressing will be diluted. For extra aroma, mix the sesame paste with a little sesame oil first. Hand-tearing the cabbage helps the dressing stick better.
