Chicken Lettuce Wraps

14 items- Chicken breast 250g
- Lettuce leaves 8 leaves
- Carrot 50g
- Mushrooms 50g
- Garlic 2 cloves
- Spring onion to taste
- Vegetable oil 2 tbsp
- Cooking wine 1 tbsp
- Soy sauce 1 tbsp
- Oyster sauce 1 tbsp
- Cornstarch 1 tsp
- Salt 1/2 tsp
- Sugar 1/2 tsp
- Water slurry 2 tbsp

Steps (5 steps)
Dice chicken into 1cm cubes. Mix with salt, wine, and cornstarch, and marinate for 10 minutes. Prepare lettuce cups, rinse and drain.
Heat oil in wok over medium heat. Sauté garlic for about 10 seconds. Turn to high heat, add chicken, stir-fry until pale and cooked, about 1 minute. Remove immediately.
In same wok, add carrot and mushroom. Stir-fry over medium heat for 2 minutes until carrot softens. Add oyster sauce and sugar, mix well.
Return chicken to wok. Turn to high heat and stir-fry for 30 seconds. Pour in water slurry, stir until sauce thickens and coats ingredients. Turn off heat.
Sprinkle with spring onion. To serve, spoon filling onto a lettuce leaf, wrap, and enjoy.
Tips
Pat chicken dry before marinating for better coating. Use high heat for quick stir-frying to keep chicken tender. Choose iceberg or butter lettuce for crispier texture.
