红三剁 (Three-Pepper Minced Pork)
A classic Yunnan home-style dish, minced pork stir-fried with tomatoes and peppers, bright red, sour-spicy and savory, excellent with rice.
Ingredients
11 items- Ground pork 200 g
- Tomatoes 2
- Green chili peppers 2
- Red chili peppers 2
- Garlic 3 cloves
- Ginger 1 small piece
- Light soy sauce 2 tbsp
- Cooking wine 1 tbsp
- White sugar 1 tsp
- Salt to taste
- Vegetable oil 2 tbsp

Steps (6 steps)
Marinate ground pork with 1 tbsp cooking wine and 1 tbsp light soy sauce for 5 minutes. Meanwhile, dice tomatoes, slice chilies, mince garlic and ginger.
Heat oil in a wok over medium heat. Add pork and stir-fry quickly until fully changed color (about 2 minutes). Remove and set aside.
In the same wok, sauté minced ginger and garlic over low heat until fragrant (30 seconds). Add green and red chili slices, stir-fry over medium heat until softened (1 minute).
Add diced tomatoes, increase to medium-high heat. Press tomatoes with spatula and cook until they soften and release juice (2 minutes).
Return pork to the wok. Add remaining soy sauce (1 tbsp), sugar, and salt. Stir-fry over high heat for 30 seconds to combine well.
Stir-fry until sauce thickens slightly, pork is glossy, and peppers and tomatoes are fully incorporated. Turn off heat and serve.
Tips
Marinating the pork makes it tender; use ripe tomatoes for rich sauce; add dried chilies if you prefer more heat.
