Stir-fried King Oyster Mushrooms with Two Peppers
A quick homestyle vegetarian dish marrying meaty king oyster mushrooms with crunchy green and red peppers in a savory sauce.

- green bell pepper 1
- red bell pepper 1
- garlic 3 cloves
- ginger 1 small piece
- light soy sauce 1 tbsp (15ml)
- dark soy sauce 1 tsp (5ml)
- oyster sauce 1 tbsp (15ml)
- black vinegar 1 tsp (5ml)
- sugar 1 tsp (5g)
- cornstarch 1 tsp (5g)
- cooking oil 3 tbsp (30ml)
- sesame oil 1 tsp (5ml)
- salt to taste

Cut king oyster mushrooms into 1cm cubes; seed and cut bell peppers into similar cubes; mince garlic and ginger.
In a small bowl, mix light soy sauce, dark soy sauce, oyster sauce, vinegar, sugar, cornstarch, and 3 tbsp water until dissolved.
Bring water to boil, blanch mushroom cubes for 1 minute with a pinch of salt, then drain.
Heat 2 tbsp oil in wok over medium heat, add mushrooms, turn to high, stir-fry about 3 minutes until golden brown and slightly charred; remove.
Add 1 tbsp oil, sauté garlic and ginger for 15 seconds; add peppers, stir-fry over high heat 2 minutes until just cooked.
Return mushrooms to wok, pour in sauce, stir-fry vigorously for about 30 seconds until sauce thickens and coats ingredients.
Turn off heat, drizzle sesame oil, toss, and serve. Garnish with scallions if desired.

Blanching then frying mushrooms ensures tender texture; prepare sauce beforehand; high heat is crucial for crispness.
