Stir-fried Green Beans with Olive Pickle
Savory olive pickle meets tender green beans and minced pork in a quick stir-fry that makes any meal feel like home.
Ingredients
8 items- Chinese olive pickle (橄榄菜) 2 tbsp (30g)
- Green beans 300g
- Ground pork 100g
- Garlic 3 cloves
- Dried chilies 2
- Soy sauce 1 tbsp
- Sugar ½ tsp
- Cooking oil 2 tbsp

Trim green beans and cut into 1cm pieces. Loosen olive pickle with chopsticks.
Heat 1 tbsp oil over medium-high. Stir-fry marinated pork until just browned; remove and set aside.
Add 1 tbsp oil, garlic and chilies. Sauté over low heat for 10 seconds until fragrant, then turn to high.
Add green beans; stir-fry over high heat for 2 minutes until wrinkled and bright green. Splash water if needed.
Return pork, add olive pickle, soy sauce and sugar. Stir-fry over high heat for 1 minute to combine well.
Taste and adjust with salt if necessary (olive pickle is already salty). Stir briefly and serve.
Tips
Green beans must be fully cooked to avoid toxins; olive pickle is quite salty, so season sparingly; adjust chilies to taste.
