Stir-fried Chinese Lettuce with Fermented Black Beans and Dace Fish
A classic Cantonese quick stir-fry where the savory fermented black beans and delicious dace perfectly complement the crisp-tender Chinese lettuce. Ready in minutes, an irresistible rice dish.
Ingredients
5 items- Chinese lettuce (oil lettuce) 300g
- Canned dace with fermented black beans 1 can (about 200g)
- Garlic 3 cloves
- Ginger 1 small piece
- Cooking oil 1 tablespoon

Wash and drain the Chinese lettuce, cut into 5 cm sections. Mince garlic, slice ginger. Open the canned dace, use chopsticks to break the fish and black beans into small pieces. Set aside.
Heat a wok over medium-high heat, add 1 tablespoon oil to coat the surface. Add minced garlic and ginger slices, stir-fry for about 30 seconds until fragrant, be careful not to burn.
Reduce to medium heat, add the crushed dace and black beans. Stir-fry for about 1 minute to fully release the savory aroma.
Increase to high heat, add the lettuce sections. Quickly stir-fry for 1-2 minutes until the leaves are evenly coated with the black bean sauce, wilted and turned bright green.
Taste and add a pinch of salt if needed (usually not needed as the dace is already salty). Stir well, then immediately turn off heat and plate.
Tips
Make sure the lettuce is thoroughly drained after washing to prevent excess water during stir-frying. The canned dace is already seasoned; adjust salt after tasting. High heat throughout keeps the lettuce crispy and tender.
