Stir-fried Bitter Gourd with Eggs

Halve the bitter gourd lengthwise, scrape out seeds and white pith, then slice into thin pieces about 2 mm. Mix with 1/2 tsp salt, let sit 5 minutes, squeeze out bitter liquid, rinse and drain.
Crack eggs into a bowl, add 1 tsp cooking wine and a pinch of salt, beat in one direction for about 20 seconds until frothy. Heat oil in a wok over high heat until smoking, pour in eggs, stir quickly until just set (about 20 seconds), then transfer out.
Leave a little oil in the wok or add 1/2 tbsp more. Fry minced garlic on low heat for 15 seconds if using. Add bitter gourd slices, stir-fry over medium heat for 1-2 minutes until color deepens and edges turn slightly golden.
Return the cooked eggs to the wok, turn heat to high, and toss everything together quickly. Add 1/2 tsp sugar, adjust salt to taste, and drizzle a few drops of sesame oil.
Stir for about 10 seconds, then plate immediately. The gourd should be tender yet crisp, the eggs golden, with a pleasant bitterness and aroma.
Tips
Salting and squeezing the gourd removes most bitterness; cook the eggs first and set aside to keep them fluffy; adding a bit of sugar rounds out the bitter notes.
