Steamed Yellow Croaker with Luffa in Soy Marinade

- Luffa (sponge gourd) 1 (about 300g)
- Ginger a few slices
- Scallions to taste
- Steamed fish soy sauce 2 tbsp
- Cooking wine 1 tbsp
- Light soy sauce 1 tbsp
- Oyster sauce 1 tsp
- Sugar 1/2 tsp
- Salt a pinch
- Cooking oil 2 tbsp

Clean the yellow croaker, score both sides with 3 slits. Rub with a pinch of salt and cooking wine. Set aside to marinate for 10 minutes to remove fishiness.
Peel and cut luffa into chunks. Slice ginger, cut scallions into sections and reserve some chopped. Prepare the marinade: mix steamed fish soy sauce, light soy sauce, oyster sauce, sugar, and 2 tbsp water in a bowl.
Place the marinated fish on a steaming plate. Lay ginger slices and scallion sections on top, then arrange luffa chunks around the fish.
Pour the prepared marinade evenly over the fish. Bring water to a boil in a steamer, place the plate inside, cover, and steam over high heat for 8-10 minutes, until the fish eyes bulge and a chopstick can easily pierce the thickest part.
Remove the plate from the steamer. Discard ginger and scallion sections. Sprinkle chopped scallions over the fish. Heat 2 tbsp oil in a small pan until smoking and pour over the scallions to release aroma.
Tips
Briefly blanch the luffa for 30 seconds to reduce water release; adjust steaming time based on fish size; the final oil drizzle is crucial for flavor.
