Spaghetti Aglio e Olio
A classic Italian pasta dish seasoned simply with garlic, olive oil, and red pepper flakes. Simple yet full of flavor.
Ingredients
7 items- Spaghetti 200g
- Extra virgin olive oil 4 tbsp
- Garlic 4 cloves
- Red pepper flakes 1 tsp
- Fresh parsley 2 tbsp
- Salt to taste
- Black pepper to taste

Bring a large pot of salted water to a boil. Cook spaghetti until al dente. Reserve 1 cup of pasta water.
Meanwhile, in a large skillet, heat olive oil over low heat. Add garlic and red pepper flakes, cook until garlic is golden, about 2 minutes.
Add drained spaghetti to the skillet along with a little pasta water. Toss quickly to emulsify the oil and water.
Remove from heat. Stir in parsley, season with salt and black pepper. Serve immediately.
Tips
Avoid burning the garlic, as it becomes bitter. The reserved pasta water is key; its starch helps the sauce cling to the pasta.
