  • Ground pork 300 g
  • Ginger 1 small piece
  • Scallions 2 stalks
  • Soy sauce 2 tbsp
  • Shaoxing wine 1 tbsp

  • Chili oil 3 tbsp

Combine ground pork with 1 tbsp soy sauce, 1 tbsp Shaoxing wine, 1/2 tsp salt, 1/4 tsp white pepper, minced ginger and white scallions. Stir vigorously in one direction for 5 minutes until sticky. Let marinate for 10 minutes.

Place a wonton wrapper on palm, add about 1 tbsp filling in center. Fold into a triangle, then bring the two corners together and press to seal. Repeat with all filling.

Bring a large pot of water to a rolling boil. Gently add wontons and stir with the back of a ladle to prevent sticking. Cook until wontons float and then for another 2 minutes until wrappers become translucent. Drain and transfer to bowls.

In a small bowl, combine 3 tbsp chili oil, 1 tbsp soy sauce, 1 tbsp vinegar, 1 tsp sugar, 1/2 tsp Sichuan peppercorn powder and minced garlic. Stir until sugar dissolves. This is the red oil sauce.

Pour the red oil sauce over the wontons. Garnish with chopped scallion greens and toasted white sesame seeds. Serve immediately.

Tips

Do not overfill wontons to avoid bursting. Cook wontons in batches if needed. For a richer flavor, prepare chili oil a day ahead. Add extra Sichuan peppercorn oil for more numbing heat.
