  • all-purpose flour 500 g
  • active dry yeast 5 g
  • warm water 300 ml
  • baking soda 1 g
  • salt 5 g
  • vegetable oil 20 ml

Mix flour, yeast and salt. Gradually add warm water and knead into a smooth dough. Cover with damp cloth and let rise for about 1 hour until doubled.

Knead the risen dough to release air. Add baking soda and knead well. Roll into a rectangle about 1 cm thick.

Roll the dough sheet into a log, coil into a round, flatten and roll into a 20 cm round disc 2 cm thick. Brush surface with oil.

Heat a pan over medium heat, reduce to low. Place the disc in, cover and cook for 5 minutes. Flip and cook another 5 minutes until both sides golden.

Transfer the browned cake to a baking sheet. Bake in preheated 200°C oven for 8-10 minutes until crust is crisp. Cool slightly and cut into wedges.

Tips

Ensure enough rising time. Cook on low heat covered first, then bake to crisp the crust. A pinch of baking soda boosts flavor and color.
