  • Ground pork 100 g
  • Potato 1
  • Green beans 50 g
  • Scallions 2
  • Ginger 1 piece
  • Garlic 3 cloves

  • Dark soy sauce 1 tsp
  • Five-spice powder 1/2 tsp
  • Shanxi aged vinegar 1 tbsp

Mix flour and salt, gradually add warm water, knead into smooth dough. Cover with damp cloth and rest for 20 minutes.

Peel and dice potato, cut green beans, mince scallions, ginger and garlic.

Heat oil over medium heat, sauté aromatics, add pork and stir until browned. Add five-spice powder, soy sauces, mix well (about 2 minutes).

Add potato and green beans, stir-fry 2 minutes. Add water to simmer until sauce thickens. Add vinegar and salt. Set aside.

Divide rested dough into sections, place into He Lao Mian mold, press evenly into boiling water.

Boil until noodles float, continue 1-2 minutes until no white core. Drain (rinse under cold water optional).

Tips

Add water gradually; dough should not be too soft. Press evenly for uniform noodle thickness. Use plenty of boiling water to prevent sticking.
