- Coconut flakes or cooked glutinous rice flour as needed

Rinse the glutinous rice, soak in cold water for at least 4 hours until grains can be easily crushed. Drain, place on a damp cloth in a steamer, and steam over high heat for 30 minutes until fully cooked and no white center remains.
Transfer the steamed rice to a bowl, gently pound with a rolling pin until slightly sticky but still grainy. Cover with a damp cloth to prevent drying.
Prepare the filling: mix ground sesame, chopped walnuts, and sugar. Divide the red bean paste into 15g balls.
Dip hands in cool water to prevent sticking. Take about 30g of rice, flatten into a disc, place a bean paste ball and some sesame sugar in the center, wrap tightly into a ball.
Roll the finished balls in coconut flakes or cooked glutinous rice flour. Optionally garnish with hawthorn strips before serving.
Tips
Dip hands in water while handling to prevent sticking; avoid over-steaming the rice to keep it grainy; fillings can be varied with date paste or peanut.
