- Green onions 2
- Ginger 3 slices
- Garlic 3 cloves
- Dried red chilies 2
- Soybean paste 1 tbsp
- Light soy sauce 1 tbsp
- Dark soy sauce 1/2 tbsp
- Sugar 1 tsp
- Water 100ml
- Cornstarch 1 tbsp
- Cooking oil 2 tbsp

Cut winter melon into strips. Slice green onion, ginger, and garlic. In a bowl, mix soybean paste, light soy sauce, dark soy sauce, sugar, and 100ml water to make the sauce. Set aside.
Heat the pan over medium heat, add 2 tbsp oil. Pan-fry the winter melon strips until slightly golden and caramelized, about 5 minutes. Remove and set aside.
Leave a little oil in the pan, add green onion, ginger, garlic, and dried chilies. Stir-fry over medium heat until fragrant, about 30 seconds.
Pour in the prepared sauce, bring to a boil over high heat until bubbling and aromatic.
Return the winter melon strips to the pan, stir to coat. Reduce heat to low, cover, and simmer for 10 minutes until the melon is translucent and tender, easily pierced with chopsticks.
Uncover, turn heat to high. Pour in the cornstarch slurry, stir quickly for about 1 minute until the sauce thickens and coats the strips.
Transfer to a serving plate, garnish with chopped green onions. Serve immediately.
Tips
Do not cut winter melon too thick or it won't absorb flavor well. Avoid excess water to maintain sauce intensity. Add slurry at the end and stir quickly to prevent lumps.
