Minchi (Macanese Minced Meat)
A classic Macanese home-cooked dish combining minced meat and potatoes, topped with a sunny-side-up egg. Simple yet comforting.

- Eggs 4
- Light soy sauce 2 tbsp
- Dark soy sauce 1 tsp
- Sugar 1 tsp
- White pepper 1/2 tsp
- Salt a pinch
- Oil 3 tbsp
- Water 1/2 cup

Peel potatoes and cut into 1 cm cubes; finely chop onion. Heat 2 tbsp oil over medium heat in a pan. Fry potato cubes until golden and slightly crispy, about 5 minutes. Remove and set aside.
In the same pan, add 1 tbsp oil over medium heat. Sauté onion for 1-2 minutes until translucent. Increase heat to high, add ground meat, and stir-fry, breaking it apart, until browned, about 2 minutes.
Add light soy sauce, dark soy sauce, sugar, white pepper, and a pinch of salt. Stir-fry for 1 minute until meat is well coated and seasoned.
Return potatoes to the pan. Add 1/2 cup water, stir. Reduce heat to low, cover, and simmer for 5-7 minutes until potatoes are tender and sauce thickens.
Uncover, turn heat to high, and stir-fry for about 1 minute to reduce the sauce until mostly evaporated. Turn off heat and transfer to a serving plate.
In another non-stick pan, fry eggs sunny-side up over medium-low heat until whites are set but yolks are runny. Place each egg on top of the minchi. Serve immediately.
Tips
Use fatty ground meat for a juicier texture. Frying the potatoes first helps them keep shape and absorb flavors. Do not reduce the sauce completely; a little gravy is perfect with rice.
