Green Pepper Chicken
Tender chicken and crisp green peppers stir-fried in a savory sauce. A classic, quick Chinese comfort dish perfect for weeknights.
Ingredients

- Green peppers 2
- Garlic 3 cloves
- Ginger 1 small piece
- Shaoxing wine 1 tbsp
- Light soy sauce 2 tbsp
- Dark soy sauce 1 tbsp
- Cornstarch 2 tsp
- White sugar 1 tsp
- White pepper a pinch
- Water 2 tbsp
- Sesame oil a dash

Slice 200 g chicken breast into thin pieces. Mix with 1 tbsp Shaoxing wine, 1 tbsp light soy sauce, 1 tsp cornstarch and a pinch of white pepper. Marinate for 10 minutes.
Remove seeds from 2 green peppers and cut into diamond shapes. Slice 3 garlic cloves and mince a small piece of ginger.
In a bowl, combine 1 tbsp light soy sauce, 1 tbsp dark soy sauce, 1 tsp sugar, 1 tsp cornstarch and 2 tbsp water as sauce.
Heat 2 tbsp oil in a wok over medium heat until moderately hot (about 150°C). Add chicken and stir-fry until just white, about 1 minute. Remove and set aside.
Increase heat to high. Sauté garlic and ginger for 10 seconds until fragrant. Add green peppers and stir-fry until charred and tender, about 2 minutes.
Return chicken to wok. Pour in the sauce and stir-fry vigorously for 30 seconds until everything is evenly coated.
Drizzle with sesame oil, toss briefly, and transfer to a plate. Garnish with sesame seeds or scallions if desired.
Tips
Marinating the chicken ensures tenderness. High heat stir-frying keeps the peppers vibrant and crunchy. Prepare the sauce in advance for smooth cooking.
