Eight Treasure Spinach
Eight Treasure Spinach is a colorful and refreshing cold dish, combining tender spinach with eight ingredients in savory sauce, perfect as a festive appetizer.

- Carrot 50 g
- Mung bean sprouts 50 g
- Dried vermicelli 20 g
- Dried shiitake mushrooms 3 pieces
- Dried shrimp 10 g
- White sesame seeds 5 g
- Peanuts 20 g

Steps (8 steps)
Cut spinach into sections, shred carrot, trim bean sprouts; set aside.
Soak vermicelli until soft and cut, soak mushrooms and shred, soak dried shrimp.
Dry-fry sesame seeds over low heat until fragrant and lightly golden; set aside.
Fry peanuts in cold oil over low heat until crispy, then crush; set aside.
Bring water to a boil, add salt and oil; blanch spinach for 20 seconds until bright, then shock in cold water and drain.
Blanch carrot, sprouts, vermicelli, mushrooms, and shrimp separately for about 30 seconds until just cooked; drain and cool.
Mix minced garlic, ginger, 2 tbsp soy sauce, 1 tbsp vinegar, 1 tsp sugar, 1/2 tsp salt, 1 tbsp sesame oil, 1 tsp chili oil; stir well.
Combine all ingredients in a large bowl, pour sauce, sprinkle sesame and peanuts; toss well. Adjust seasoning and serve.
Tips
Adding salt and oil when blanching keeps spinach bright green; blanch ingredients separately to prevent flavor mixing; adjust sauce to taste.
