Crispy Fried Chicken (Xiangsu Ji)
Golden crispy coating with tender, juicy chicken inside – a classic Chinese fried chicken that is irresistibly flavorful.
Ingredients
12 items- Chicken thighs 500g
- Eggs 2
- All-purpose flour 50g
- Breadcrumbs 100g
- Cooking wine 1 tbsp
- Light soy sauce 2 tbsp
- Ginger 1 small piece
- Garlic 3 cloves
- Salt 1 tsp
- White pepper 1/2 tsp
- Five-spice powder 1/2 tsp
- Cooking oil as needed

Steps (6 steps)
Cut chicken into 4 cm cubes. Add cooking wine, soy sauce, ginger, garlic, salt, white pepper and five-spice powder. Mix well. Marinate for 30 minutes.
Prepare three plates: flour, beaten eggs and breadcrumbs.
Coat each chicken piece in flour, then egg, then breadcrumbs. Press gently to adhere.
Heat oil in a wok to 170°C over high heat. Reduce to medium and fry chicken for 4 minutes until golden brown. Drain.
Heat oil to 200°C, add chicken back and fry for 1 minute until extra crispy. Drain well.
Serve hot, sprinkled with salt and pepper or chili powder to taste.
Tips
Double frying ensures extra crispiness. Longer marinating deepens the flavor.
