Clear Simmered Whole Chicken
A whole chicken simmered in clear broth until tender and flavorful. A nourishing, comforting dish perfect for winter.
Ingredients
7 items- Whole chicken 1 (about 1500g)
- Ginger 1 piece (20g)
- Scallion 2 stalks
- Cooking wine 2 tablespoons
- Salt to taste
- Goji berries 10g
- Water as needed

Clean the chicken, remove giblets, feet, and head. Pat dry with paper towels. Lightly pound the chicken with the back of a knife to tenderize.
Place chicken in a pot with cold water. Bring to a boil over high heat, skim off foam. Boil for 3 minutes, then rinse with warm water.
Slice ginger, cut scallions into sections, soak goji berries in cold water.
Transfer chicken to a clay pot or heavy pot. Add ginger, scallions, and cooking wine. Pour in boiling water until chicken is submerged by 2-3 cm.
Bring to a boil, then reduce to low heat. Cover and simmer gently for 60 minutes. Avoid opening the lid.
Test doneness: insert a chopstick into the thickest part of the drumstick; if it goes through easily with no pink juice, it's done.
Add soaked goji berries, simmer for another 10 minutes. Season with salt, stir, then turn off heat.
Carefully lift the chicken into a serving bowl, pour the broth over. Garnish with chopped scallions or cilantro.
Tips
Use free-range chicken or an old hen for richer flavor; extend simmering time to 1.5 hours if needed. Low heat ensures clear broth and tender meat. Add salt at the end to keep the chicken tender.
