Steps (5 steps)
Rinse glutinous rice, soak in plenty of water for at least 4 hours, then drain. This ensures softness when steamed.
Line a steamer with damp cheesecloth, spread rice evenly, and steam over high heat for about 30 minutes until fully cooked, tender and separate.
In a small pot, combine coconut milk, sugar, and salt. Heat over low flame while stirring constantly for about 5 minutes until sugar melts and milk thickens slightly.
Add hot steamed rice to coconut mixture, mix well with a wooden spatula to coat each grain. Let rest for 10 minutes to absorb fully.
Gently stir in sweetened red beans and goji berries. Press rice into a bowl, invert onto a plate, and sprinkle with white sesame and shredded coconut. Serve.
Tips
Soak rice thoroughly to avoid undercooking; cook coconut milk on low heat to prevent separation; add a little lard for extra sheen.
