Cut firm tofu into 2 cm cubes. Blanch in boiling salted water for 2 minutes to remove beany taste and firm up; drain.

Heat oil in pan over medium heat until shimmering. Add tofu, cook over medium-low heat until golden brown on all sides, about 6 minutes, gently turning.

Using residual oil, sauté ginger slices, garlic slices, and star anise over medium heat for 1 minute until fragrant.
