Ba Yu Noodles
Ba Yu Noodles is a traditional Shanxi hand-pulled noodle dish. The dough strips are flicked into boiling water, creating chewy noodles served with a savory sauce.
Ingredients
13 items- All-purpose flour 300g
- Water 150ml
- Salt 3g
- Cooking oil 1 tbsp
- Ground pork 150g
- Scallions 2
- Ginger 1 small piece
- Garlic 3 cloves
- Light soy sauce 2 tbsp
- Dark soy sauce 1 tbsp
- Shanxi vinegar 1 tbsp
- Sugar 1 tsp
- Chili oil 1 tbsp

Steps (6 steps)
Mix flour and salt, gradually add water, knead into a smooth dough for about 10 minutes until the surface is smooth and not sticky.
Cover with a damp cloth and rest for 20 minutes until the dough becomes soft and elastic.
Knead the dough briefly, roll into a 1cm-thick sheet, brush both sides with oil, and rest for another 10 minutes to prevent sticking.
Bring a large pot of water to a rolling boil. Using chopsticks, flick thin strips from the edge of the dough into the water. Cook for about 3 minutes until they float and are translucent.
Drain noodles and rinse under cold water. In another pan, stir-fry pork over medium heat until browned. Add scallion, ginger, garlic, then soy sauces, vinegar, sugar, and a little water. Simmer until thickened.
Pour the sauce over the noodles, add chili oil and scallions if desired, mix well and serve immediately.
Tips
Knead the dough thoroughly and allow sufficient resting time for elasticity. Boil noodles in plenty of water over high heat. Rinsing in cold water gives a smoother texture. The sauce can be prepared ahead.
