Watermelon Chicken
Chicken steamed inside a watermelon shell; the meat absorbs the fruit's sweetness, yielding tender, juicy bites with a clear broth. A refreshing summer specialty.
Ingredients
9 items- Watermelon 1 (about 2 kg)
- Chicken ½ (about 500 g)
- Ginger 3 slices
- Spring onions 2
- Shaoxing wine 1 tbsp
- Light soy sauce 1 tbsp
- Salt 1 tsp
- White pepper ¼ tsp
- Goji berries 1 tbsp

Wash watermelon, cut off top at 1/5 height. Scoop out flesh leaving 1 cm thick wall; dice some of the flesh.
Marinate chicken with wine, soy sauce, salt, white pepper, ginger, and spring onion for 15 minutes.
Combine marinated chicken, diced watermelon, and goji berries; fill the watermelon shell.
Cover with lid, secure with toothpicks. Steam over boiling water then medium heat for 35 minutes until easily pierced with chopsticks.
Remove watermelon, open lid, sprinkle with spring onion. Serve directly, scooping out chicken and fruit.
Tips
Choose a thick-skinned watermelon to prevent deformation. Place a small bowl under for stability. Cut chicken pieces uniformly for even cooking.
