Teochew Sweet Porridge
Teochew sweet porridge is a classic Chaoshan dessert. Soft glutinous rice, rich brown sugar, and warming ginger make a comforting bowl of sweetness.
Ingredients
6 items- Glutinous rice 1 cup (150g)
- Brown sugar 1/2 cup (80g)
- Ginger 1 piece (20g)
- Dried longan 1/4 cup (20g)
- Red dates (jujubes) 6
- Water 6 cups (1.5L)

Soak glutinous rice in water for 2 hours, then drain well. Slice ginger, peel longan, pit and halve red dates.
In a pot, bring 6 cups of water to a boil over high heat. Add rice and ginger slices. Once boiling again, reduce to low heat, cover, and simmer for 30 minutes, stirring occasionally.
Add longan and red dates. Continue simmering over low heat for 15 minutes until the porridge thickens and rice grains start to bloom.
Add brown sugar, stir until fully dissolved. Cook for another 5 minutes until the porridge turns amber and fragrant.
Turn off heat and let it rest covered for 5 minutes to blend flavors. Serve in bowls, optionally topped with sesame seeds or shredded coconut.
Tips
Soaking glutinous rice is essential for a soft texture. Ginger balances sweetness and adds warmth. Stir occasionally to prevent sticking. Resting after cooking improves the texture.
