Stir-fried Celery with Shredded Pork

- Celery 300g
- Ginger 1 small piece
- Garlic 2 cloves
- Light soy sauce 2 tbsp
- Dark soy sauce 1 tsp
- Cooking wine 1 tbsp
- Vinegar 1 tsp
- Sugar 1/2 tsp
- Cornstarch 2 tsp
- Salt pinch
- White pepper pinch
- Cooking oil 3 tbsp
- Water 3 tbsp

Shred pork tenderloin, marinate with 1 tbsp wine, 1 tbsp light soy sauce, and 1 tsp starch for 10 mins. Cut celery into sections, mince ginger and garlic.
In a small bowl, mix 1 tbsp light soy sauce, 1 tsp dark soy sauce, 1 tsp vinegar, 1/2 tsp sugar, 1 tsp starch, and 3 tbsp water to form sauce.
Heat pan over medium heat, add 2 tbsp oil until moderately hot. Stir-fry shredded pork until just cooked, about 1 min. Remove and set aside.
Add 1 tbsp oil in pan, turn to high heat. Sauté ginger and garlic until fragrant, about 10 sec. Add celery and quickly stir-fry for 1-2 mins until bright green and slightly wrinkled.
Return pork to pan, pour in the sauce. Stir-fry over high heat for 15-20 seconds until sauce thickens and coats ingredients.
Sprinkle with white pepper (optional), toss well, and serve.

Marinating pork with starch and wine locks in moisture for tenderness; high heat quick-frying preserves celery's crunch; preparing the sauce beforehand speeds up cooking.
