Steamed Yellow Croaker with Luffa in Soy Sauce

- Luffa (loofah) 1
- Ginger 1 piece
- Scallions 2 stalks
- Red chili a little
- Cooking wine 1 tbsp
- Steamed fish soy sauce 2 tbsp
- Cooking oil 1 tbsp
- Salt 1/2 tsp

Clean and gut the yellow croaker, pat dry and score both sides. Rub with salt and cooking wine, marinate for 10 minutes to remove fishiness.
Peel luffa and cut into rolling chunks; julienne ginger, scallions, and red chili (if using).
Line a steaming plate with some ginger shreds, place the fish on top, put remaining ginger and scallion shreds over the fish, then arrange luffa chunks around.
Bring water in a steamer to a boil over high heat. Place the plate in, cover, and steam for 8-10 minutes until fish eyes bulge and a chopstick easily pierces the thickest part.
Carefully remove the plate using oven mitts, discard the accumulated liquid from the plate to avoid bitterness.
Drizzle steamed fish soy sauce evenly over the fish, then top with fresh scallion and red chili shreds.
Heat 1 tbsp oil in a small pan over high heat until just smoking. Quickly pour the hot oil over the scallion shreds to sizzle and release fragrance. Serve immediately.
Tips
Do not oversteam the fish; 8-10 minutes is ideal for tenderness. Soak cut luffa in salted water to prevent browning. The final oil pour is crucial to enhance aromas.
