Prepare ingredients: Slice smoked tofu into thin pieces (0.5 cm). Julienne pork tenderloin; marinate with 1 tsp cooking wine, 1 tbsp light soy sauce, and 1/2 tbsp cornstarch. Drizzle a little oil to lock in moisture. Set aside for 10 minutes.

Julienne bell peppers and soaked black fungus; mince ginger and garlic. In a small bowl, mix the remaining light soy sauce, dark soy sauce, sugar, salt, 1/2 tbsp cornstarch, and 2 tbsp water to make the sauce.
