- Pork tenderloin 150 g
- Green bell pepper 1
- Red bell pepper 1
- Dried black fungus 10 g
- Ginger 1 small piece

- Light soy sauce 2 tbsp
- Dark soy sauce 1/2 tsp
- Sugar 1 tsp
- Salt 1/4 tsp
- Cornstarch 1 tbsp

Prepare ingredients: Slice smoked tofu into thin pieces (0.5 cm). Julienne pork tenderloin; marinate with 1 tsp cooking wine, 1 tbsp light soy sauce, and 1/2 tbsp cornstarch. Drizzle a little oil to lock in moisture. Set aside for 10 minutes.
Julienne bell peppers and soaked black fungus; mince ginger and garlic. In a small bowl, mix the remaining light soy sauce, dark soy sauce, sugar, salt, 1/2 tbsp cornstarch, and 2 tbsp water to make the sauce.
Heat a wok over medium heat with 1 tbsp oil. When oil is about 150°C (five finger test), add pork strips. Quickly stir-fry until they turn white and just cooked through, about 1 minute. Remove and set aside.
Add another 1 tbsp oil to the wok, turn to high heat. Sauté ginger and garlic until fragrant, then add tofu slices. Spread and pan-fry until both sides are lightly browned and blistered, about 2 minutes.
Add bell pepper strips and shredded black fungus. Stir-fry over high heat until vegetables are slightly tender but still crisp, about 1 minute.
Return the cooked pork to the wok. Toss everything together over high heat for about 30 seconds.
Pour in the prepared sauce along the edge of the wok. Continue stir-frying over high heat until the sauce thickens and coats all ingredients, about 2 minutes. Turn off the heat.
Drizzle with sesame oil, toss a few times to combine, and transfer to a serving plate.
Tips
Use high heat when stir-frying tofu to develop a smoky aroma; prepare the sauce in advance for a smooth cooking process; marinating pork with a little oil keeps it tender.
