潮州蜜饯
Chaozhou candied fruit is a traditional sweet from the Chaoshan area of Guangdong, with a delightful balance of sweet and sour flavors; perfect as a snack or with tea.

- Granulated sugar 250g
- Water 200ml
- Honey 2 tbsp
- Salt 1 tsp
- Lemon juice 1 tbsp

Wash the kumquats and drain. Use a toothpick to prick 4-5 small holes in each kumquat or make a few shallow cuts to help remove bitterness during brining.
Place the kumquats in a bowl, add salt and mix well. Let marinate for 2 hours or overnight to remove the bitter taste.
Discard the liquid, rinse the kumquats 2-3 times with fresh water, and drain thoroughly.
In a clean pot without oil, add sugar and water. Heat over medium heat, stirring until sugar dissolves. Reduce to low heat and simmer about 5 minutes to make a syrup.
Add the kumquats to the syrup and cook over low heat for 40-50 minutes until the kumquats become translucent and the syrup thickens enough to coat the back of a spoon, stirring occasionally.
Add honey and lemon juice (if using), cook for 5 more minutes to integrate flavors. Turn off heat and let cool naturally in the syrup.
Transfer the completely cooled candied kumquats and syrup into a sterilized sealed jar. Refrigerate. Enjoy directly or dilute with water.
Tips
Keep the heat low throughout to avoid caramelization; the syrup should be as thick as honey; for a drier texture, drain the kumquats after cooking and air-dry them.
