Wash the kumquats and drain. Use a toothpick to prick 4-5 small holes in each kumquat or make a few shallow cuts to help remove bitterness during brining.

Place the kumquats in a bowl, add salt and mix well. Let marinate for 2 hours or overnight to remove the bitter taste.

Discard the liquid, rinse the kumquats 2-3 times with fresh water, and drain thoroughly.

In a clean pot without oil, add sugar and water. Heat over medium heat, stirring until sugar dissolves. Reduce to low heat and simmer about 5 minutes to make a syrup.

Add the kumquats to the syrup and cook over low heat for 40-50 minutes until the kumquats become translucent and the syrup thickens enough to coat the back of a spoon, stirring occasionally.
