A traditional Beijing dessert: soft and sweet glutinous rice balls filled with red bean paste and coated with sesame seeds.
Ingredients
4 items- Glutinous rice 200g
- Red bean paste filling 150g
- White sesame seeds (toasted) 30g
- Sweet osmanthus syrup or sugar to taste

Wash the glutinous rice thoroughly and soak in enough water for at least 4 hours until the grains can be easily crushed. Drain well.
Place a damp cloth in a steamer, spread the rice evenly, steam over high heat then turn to medium for 20 minutes until fully cooked and sticky.
Transfer the steamed rice to a bowl and pound it with a rolling pin or mixing stick into a sticky, cohesive dough. Cover with plastic wrap to prevent drying.
Divide the red bean paste into 15g portions and roll into balls. Spread the toasted sesame seeds on a plate.
Wet your hands with water to prevent sticking. Take about 30g of the rice dough, flatten into a disc, place a bean paste ball in the center, wrap tightly and shape into a ball.
Roll the rice ball gently in the sesame seeds, pressing lightly to ensure an even coating.
Arrange on a serving plate. Drizzle with sweet osmanthus syrup or sprinkle with sugar. Serve and enjoy the soft, sweet, and nutty texture.
Tips
The rice must be soaked long enough (at least 4 hours). Pound the rice while it's hot. Wet your hands during shaping to avoid sticking.
