Pineapple Braised Pork Ribs

- Pineapple 200g
- Green bell pepper 1
- Red bell pepper 1
- Ginger 3 slices
- Garlic 3 cloves
- Soy sauce 2 tablespoons
- Cooking wine 1 tablespoon
- Ketchup 2 tablespoons
- Sugar 2 tablespoons
- White vinegar 1 tablespoon
- Salt 1/2 teaspoon
- Cornstarch 1 tablespoon
- Cooking oil as needed

Place ribs in cold water with 1 tbsp cooking wine; bring to a boil, skim off foam, cook 2 min, then drain.
Mix ribs with soy sauce, salt and cornstarch; marinate for 15 min.
Cut pineapple into chunks, soak in salted water. Dice bell peppers; mince ginger and garlic.
In a bowl, combine ketchup, sugar, vinegar, water starch, soy sauce and water to make the sauce.
Heat oil to 350°F; fry ribs over medium heat for 5 min until golden, drain on paper towels.
Leave a little oil in pan; sauté ginger and garlic, add peppers, stir-fry 1 min until crisp-tender; remove.
Pour sauce into pan; simmer on low until bubbling, add ribs and pineapple; turn heat high, toss 2 min to glaze.
Return peppers to pan; toss quickly to combine and serve at once.
Tips
Soaking pineapple in salted water removes astringency and enhances sweetness; fry ribs over medium heat to cook through; adjust sweet-sour ratio to taste.
