- Green bell pepper 1/2
- Red bell pepper 1/2
- Onion 1/4
- Garlic 3 cloves
- Cooking wine 1 tbsp
- Light soy sauce 1 tbsp
- Sugar 1/2 tsp
- Cooking oil 2 tbsp

Slice ham thinly; julienne bell peppers and onion; beat eggs with wine and salt until frothy, about 30 seconds.
Heat oil in wok over medium-high then high. Stir-fry ham 20 seconds until edges curl, remove.
Clean wok, heat oil over medium, sauté garlic and onion 1 minute until translucent.
Add bell peppers, stir-fry over high 1 minute until softened.
Reduce to medium, pour eggs. Scramble quickly 30 seconds until 80% done.
Return ham, add soy sauce and sugar, toss over high 20 seconds until eggs coat ham. Serve.
Tips
Ham is salty, adjust salt carefully; scramble eggs until just set for tenderness; high heat keeps ingredients crisp.
