Macau Lemon Seven Chicken
A sweet and sour Macau specialty, chicken wings perfectly infused with lemon and 7UP soda, crispy outside and tender inside.
Ingredients
13 items- Chicken wings 8 (about 500g)
- Lemon 1
- 7UP soda 1 can (330ml)
- Light soy sauce 2 tbsp
- Dark soy sauce 1 tbsp
- Honey 1 tbsp
- Garlic 3 cloves
- Ginger 3 slices
- Salt 1/2 tsp
- White pepper powder a pinch
- Cooking wine 1 tbsp
- Flour 2 tbsp
- Cooking oil as needed

Place chicken wings in a bowl, add light soy sauce, dark soy sauce, cooking wine, salt, white pepper, ginger slices, and minced garlic. Mix well and marinate for 20 minutes.
After marinating, evenly coat each wing with flour, shaking off excess.
In a small bowl, mix lemon juice, 7UP soda, and honey into a sauce.
Heat oil in a pan over medium heat (enough to half-submerge wings). When oil is 60% hot (~160°C), add wings and fry over medium-low heat until golden on both sides (about 4 min per side). Drain.
Pour out most of the oil, leaving a little in the pan. Turn to medium heat, add sauce, and cook until slightly thickened (about 2 min).
Return wings to pan, stir quickly to coat. Increase heat to high, reduce sauce until it clings to the wings (about 1 min).
Squeeze a little fresh lemon juice for aroma, optionally add lemon zest, and stir well.
Plate and garnish with white sesame seeds or chopped scallions. Serve hot.
Tips
The longer the chicken marinates, the more flavorful. Cook the sauce until thickened before adding wings. Add fresh lemon juice at the end to preserve the fresh aroma.
