Macau Durian Ice Cream

- Whole milk 1 cup
- Heavy cream 3/4 cup
- Egg yolks 3 large
- Caster sugar 1/3 cup

Mash the ripe durian flesh with a fork until smooth; remove any large fibers. Set aside.
Whisk egg yolks with sugar until pale and thick. Heat milk to just bubbling, gradually whisk into yolks, return to pan over low heat, stir constantly until thick enough to coat the back of a spoon (about 5 minutes). Remove immediately.
Stir the durian puree into the custard until smooth. Let cool to room temperature. Whip heavy cream to soft peaks. Fold into durian mixture.
Pour custard into an ice cream maker and churn according to manufacturer's instructions until soft-serve consistency (20-25 minutes). Alternatively, freeze in a container, stirring every 30 minutes for 3-4 times.
Transfer to an airtight container and freeze until firm (at least 4 hours). Let sit at room temperature 3-5 minutes before scooping.
Tips
Use very ripe durian for strongest flavor; do not overheat custard or yolks will scramble; multiple stirrings during freezing reduces ice crystals for smoother texture.
