Lotus Root and Pork Rib Soup
Tender lotus root and succulent pork ribs simmered to perfection in a comforting, nourishing broth.
Ingredients
8 items- Pork ribs 500g
- Lotus root 400g
- Ginger 4 slices
- Spring onions 2 stalks
- Goji berries 1 tbsp
- Salt to taste
- White pepper powder 1/2 tsp
- Cooking wine 1 tbsp

Place pork ribs in a pot with cold water, ginger slices, and cooking wine. Bring to a boil over medium heat, skim off the froth, and boil for 2 minutes. Remove, rinse with warm water, and drain.
Peel and cut lotus root into chunks, soak in water to prevent oxidation. Soak goji berries in warm water until soft. Set aside.
In a clay pot, add ribs, ginger slices, and spring onion sections. Add enough hot water (about 2L). Bring to a boil over high heat, then reduce to low heat, cover, and simmer for 40 minutes.
Add lotus root chunks. Continue simmering over low heat for 30 minutes until lotus root is tender and the meat easily separates from the bone.
Add soaked goji berries, cook over high heat for 3 minutes. Season with salt and white pepper. Turn off heat, sprinkle with chopped spring onions, and serve.
Tips
Blanching ribs in cold water removes impurities and keeps the soup clear. Choose lotus root with sealed ends to avoid mud. Slow simmering in a clay pot yields the best flavor.
